When would I use "Authorize-only"?

Typically, this is for holding a charge. A very common use case is when checking into a hotel. At check-in, you are required to provide a credit card for "incidentals", to which the hotel authorizes a charge (on hold) on your card. 

For the most part, these charges are released after the 7 day period unless manually captured.
