When would I use "Authorize-only"?

Authorize only is for placing a hold on a card rather than charging it right away. The classic example is a hotel: at check-in they authorize a hold on your card for incidentals, then capture the final amount when you check out.

A hold is released automatically if you don't capture it in time: at least 2 days for a card reader or Tap to Pay (5 for Visa), about 7 days for a typed card. Need longer? See Extended authorization. To actually collect the money, capture the payment before then.
